A Healthy and Tasty Alternative To Mashed Potatoes

If you are anything like me, your child eats some vegetables but not enough that you feel comfortable with. I’m always trying to find new recipes, tips, and ideas to add more veggies to Jade’s diet. Last time I wrote I suggested dried fruits and veggies. This time my suggestion is from a recipe I saw on TV (Helen Cavallo “That’s Fresh” on Disney Jr.) and tried, with a few tweaks of my own.

In my household mashed potatoes are a well liked dish, but since I’m trying to cut carbs, it’s not a dish I go to. It’s definitely a missed side dish for some of our meals. So when I tried cauliflower gratin and tasted the mixture before baking it, it actually tasted like mashed potatoes – consistency and all. So here you go, the recipe for Cauliflower Masked Potatoes and Cauliflower Gratin. Let me know what you think!

Cauliflower Masked Potatoes

  • 1 cauliflower
  • Salt
  • Pepper
  • 1 cup milk
  • 1 tablespoon margarine

Cut end of the cauliflower off and break off the flowerets. Boil flowerets for 15 mins. You can add salt to your water now or wait. Puree the flowerets with the milk, salt, pepper, and margarine. Stop blending when it’s a consistency you like.

Cauliflower Gratin

  • 1 cauliflower
  • Salt
  • Pepper
  • 1 cup milk
  • 1 cup grated or shredded parmesan cheese
  • 1 handful grated or shredded parmesan cheese
  • 1 handful shredded or grated mozzarella cheese
  • 1 cup bread crumbs
  • 1 handful chopped parsley

Pre-heat oven to 425. Cut end of the cauliflower off and break off the flowerets. Keep the stalk and 2 or 3 flowerets and set aside. Boil the bulk of the flowerets for 15 mins. You can add salt to your water now or wait. Puree the flowerets with the milk, salt, pepper, the handful of parmesan and mozzarella cheeses. Stop blending once smooth in consistency. Set aside.

Finely chop the stalk and remaining flowerets. Mix together the chopped cauliflower, parsley, bread crumbs and parmesan cheese.  In a baking dish (sprayed with non stick spray), pour your blending mixture then top with an even layer of the bread crumb mix. Bake for 20-30 mins at 425. If you like things cheesy feel free to add more cheese!

Total Serving: 4-6
